Carl,
This is what I used
http://versatex.com/pvc-sheet-material
As you mentioned...it is a bit flex-y. Also it is not dimensionally stable, no stronger on edge vs flat, if you were to cut a 4 inch wide piece and the put it on edge.
I had to add some re-enforcement with aluminum angle and SS bolts and nuts.
Very easy to work with using basic woodworking tools.
Not sure of the cost difference...just sharing.

Hi I used starboard with anti skid molded into the surface, it's great to walk on even wet and has never been too hot to walk on. I mounted it from the underside thru the stringers for a nice clean install. The stuff is maintance free, easy to clean and lasts forever. It looks just as good now as the day I finished it, and it's been just over five years in the south florida sun.

Hi Carl I used 5/8 starboard. I got 4x8 and one 54 inch by 8 foot sheets from TPI plastics in Tampa. The starboard is applied directly to the stringers attached from the underside on both sides of the centerline but not all the way out the edges. The only place I needed extra support was the doors where I added stiffeners to the back side with stainless fasteners countersunk from the top for a flush surface. The seams are at the aft end of the forward doors full width of the deck. In the back part of the deck the seam is on the boats centerline. So there are three main pieces not counting the doors, the forward piece about 1/2 of the deck and aft 2 parts making up the other half, hopes this helps.

The only flex was at the door seams which I used aluminum angle stock to re-enforce. If you have more questions PM me a phone number and I'll try to answer them.

Agree on the screwing it down so you can easily work below. Be sure to consider a gutters or channels for the water to clear the deck. A lot of the corrosion issues I see are due to the really flat deck designs and the water runs off the side and down into the bilge more than those poor drains. Also, the hatches are perfect for acting like a sieve for water to dump right on top of your distributor.

If I may suggest upgrading the gas tanks to a poly or SS because those steel tanks really rust overtime.
